For the Koftas:

  • 4 nos - Hard Boiled Eggs
  • 500 gms - Mutton Keema (Minced meat)
  • 2 tbsp - Roasted Gram Flour (Bhuna besan)
  • 1 tbsp - Ginger Garlic Paste
  • 1 tsp - Garam Masala & Red Chilli Powder
  • 1 no - Raw Egg (For binding)

For the Gravy:

  • 2 large - Onions (Browned and pureed)
  • 0.5 cup - Whisked Yogurt (Dahi)
  • 2 medium - Tomatoes (Pureed)
  • Whole spices & Standard Indian powdered spices

Step-by-Step Instructions

  1. Keema Prep: Keema ko ekdum barik pees lein (machine mein). Usme besan, adrak-lehsun paste, kachha anda, namak, aur masale dalkar achhe se ghoond lein (knead like dough).
  2. Wrap the Eggs: Thoda keema haath par flat karein, uske beech mein ubla anda rakhein, aur ande ko chaaron taraf se keeme se seal kar dein taaki kofte ka shape ban jaye.
  3. Fry: Tel garm karein aur kofte ko golden brown hone tak deep fry/shallow fry karein. Unhe nikal lein.
  4. The Gravy: Kadhai mein tel garm karein, khade masale dalein. Brown pyaz ka paste aur tomato puree dalkar 10 min bhune.
  5. Yogurt Mix: Dahi mein dhaniya, laal mirch aur haldi milakar paste banayein aur kadhai mein dalein. Tel alag hone tak bhune.
  6. Simmer: Gravy mein 1 cup pani dalein. Ubaal aane par kofte dalein aur dhak kar 10 min dheemi aanch par pakayein.
  7. Serve: Serve karte waqt har kofte ko aada kaat (halve) dein taaki 'Nargis' phool jaisa look aaye!
