Yahan dosa tave par spread karne ke baad, uske bilkul upar fenta hua masaledar anda daal diya jata hai. Anda dose par puri tarah paint ki tarah fel jata hai. Ghee ki wajah se dosa neeche se ekdum kadak (crispy) rehta hai aur upar se anda naram aur fluffy ho jata hai.

The Dosa & Egg Mix:

  • 2 cups - Dosa Batter (Idli/Dosa fermented batter)
  • 3 nos - Eggs (Whisked in a bowl/glass)
  • 1 small - Onion (Very finely chopped) & Coriander leaves
  • 1 tsp - Gunpowder (Idli Podi) or Red Chilli Powder
  • 2 tbsp - Ghee or Sesame Oil
  • 0.5 tsp - Salt & Pepper

Step-by-Step Instructions

  1. Egg Prep: Ek glass mein ande todein, usme kata pyaz, dhaniya, namak aur kali mirch daal kar achhe se fente (whisk) lein.
  2. Spread the Dosa: Ek bade flat tave (cast iron preferable) ko garm karein. Ek bada chammach (ladle) dosa batter dalein aur usey gol (circular) patla spread karein.
  3. The Egg Wash: Batter ke felte hi (jab woh gila ho), turant uske upar fenta hua anda (thodi matra mein, lagbhag aadha anda) daal dein. Dosa spatula ki madad se ande ko poore dose par halke haath se felayein.
  4. The Flavor: Ande ki wet layer ke upar thoda sa Idli Podi (Gunpowder) chhidkein. Dosa ke kinaron (edges) par ghee ya sesame oil dalein.
  5. Cook: Jab dose ka base brown aur crispy ho jaye, aur upar ka anda pak jaye (dry ho jaye), tab dose ko palat dein (flip). (Kuch log nahi palatte, par street style mein ande ko halka tave par seka jata hai).
  6. Finish: 10 second baad wapas palat lein, half fold karein aur garma garam chutney ke sath serve karein.
