Step-by-Step Instructions

  1. The Base: Ek chaude tave (ya pan) par butter garm karein. Jeera dalne ki zaroorat nahi. Seedhe baarik kata pyaz aur hari mirch dalein. Pyaz ko translucent (naram) hone tak bhoone.
  2. Masala Magic: Haldi, laal mirch aur pav bhaji masala dalein. (Pav bhaji masala is the secret behind the Mumbai street flavor).
  3. Tomatoes: Ab tamatar dalein aur namak chhidkein. Tamatar ko spatula se daba-daba kar bilkul mushy (paste jaisa) bana lein.
