  • 4 nos - Eggs (One for each appam)
  • 1 pinch - Salt & Crushed Black Pepper
  • 1 tsp - Coconut oil (for greasing)
  • An Appachatti (Small wok-like curved pan used specifically for Appams)

Step-by-Step Instructions

  1. Heat the Pan: Ek Appachatti pan (ya choti non-stick kadhai) ko dhimi aanch par garm karein aur coconut oil ki ek boond se halka grease kar lein.
  2. The Swirl: Pan ke center mein 1 ladle (karchhi) appam batter dalein. Pan ko dono handles se pakad kar gol (circular) ghumayein taaki batter edges tak fel jaye aur center mein thoda thick bacha rahe.
  3. The Egg Drop: Jaise hi batter pan mein settle ho (par abhi liquid ho), ek anda seedhe appam ke center (thick part) mein tod dein.
  4. Season: Ande ke upar thoda sa namak aur kali mirch chhidkein.
  5. Steam: Appachatti ko tight dhakkan se cover kar dein. (Appam ko palata nahi jata, woh bhaap se hi pakta hai).
  6. Finish: 2 se 3 minute baad dhakkan hatayein. Kinare (edges) golden aur crispy ho chuke honge, aur center mein anda set (halka runny) ho chuka hoga. Dheere se nikal kar stew ke sath serve karein.
