  • 500 gms - Fresh Spinach (Palak - Washed and cleaned)
  • 1 tbsp - Fresh Cream or Malai

The Tempering (Tadka):

  • 2 tbsp - Oil / Ghee
  • 1 medium - Onion (Finely chopped)
  • 1 medium - Tomato (Finely chopped)
  • 1 tbsp - Ginger Garlic Paste
  • 1 tsp - Cumin Seeds (Jeera)
  • 0.5 tsp - Garam Masala & Turmeric

Step-by-Step Instructions

  1. Blanch the Spinach: Ubalte pani mein palak aur 2 hari mirch dalein. Sirf 2 minute ubaalein aur turant nikal kar barf ke thande pani mein daal dein. Thanda hone par mixer mein smooth purée bana lein.
  2. Egg Fry: Uble andon ko halka cut lagayein aur thode tel mein haldi dalkar golden fry kar lein.
  3. The Tadka: Kadhai mein ghee garm karein. Jeera dalein. Phir pyaz dalkar golden brown hone tak bhoone.
  4. Masala: Adrak lehsun paste, kate tamatar aur namak dalein. Tamatar soft hone tak pakayein. Saare sukhe masale dalein.
  5. The Spinach Mix: Ab palak ki purée kadhai mein dalein. Aanch dhimi karein. Palak ko zyada nahi pakana hai warna uska color dark ho jayega. Sirf 3-4 minute simmer karein.
  6. Final Touch: Fry kiye hue ande gravy mein dalein. Upar se fresh cream aur thoda sa garam masala dalkar mix karein aur gas band kar dein. Serve hot!
