The Dough & Stuffing:

  • 1 cup - Whole Wheat Flour (Atta - kneaded into soft dough)
  • 3 nos - Eggs (For 2 large parathas)
  • 1 small - Onion (Very finely chopped)
  • 2 nos - Green Chillies & Coriander (Finely chopped)
  • 2 tbsp - Oil or Ghee (For roasting)
  • 0.5 tsp - Garam masala & Salt

Step-by-Step Instructions

  1. Egg Mix: Ek jug ya cup (jisase dalne mein aasani ho) mein ande todein, pyaz, mirch, dhaniya aur namak-masala dal kar khoob fentein.
  2. Roll the Dough: Aate ki do choti loyi (balls) banayein. Dono ko patli roti jaisa bel lein.
  3. The Envelope (Method 1): Ek roti tave (pan) par rakhein. Halke se sikne par usey palat dein. Ek taraf ghee lagayein. Dusri roti tave par nahi, balki pehli roti ke base banne par use karte hain... par rukhiye, sabse aasan 'Lifafa' (Envelope) method use karte hain!
  4. Lifafa Method (Easy & Best): Ek badi roti belein. Uske bilkul center (beech) mein ande ka mixture dalein (thoda kam dalein, overflow na ho). Roti ke chaaro kono (edges) ko center mein laakar fold karein ek square envelope ki tarah. Edges ko halka pani lagakar chipka dein.
  5. Roast: Is square parathe ko garm tave par dheere se rakhein. Aanch medium-low rakhein.
  6. Puff it up: Dono taraf ghee ya tel lagakar parathe ko sekhein. Spatula se halke-halke press karein. Aap dekhenge paratha gubbare (balloon) ki tarah phoolne lagega kyunki andar ka anda pak raha hai!
  7. Serve: Crispy brown aur kadak hone par utaarein, beech se triangle mein kaate aur achar ke sath serve karein.
