The Two Onions:

  • 2 medium - Onions (Finely chopped - For the gravy base)
  • 1 large - Onion (Cut into big squares/petals - For the crunch)
  • 4 nos - Hard Boiled Eggs (Slit)

The Gravy:

  • 2 tbsp - Oil or Ghee
  • 2 medium - Tomatoes (Pureed)
  • 1 tbsp - Ginger Garlic Paste
  • 1 tsp - Red Chilli & Coriander Powder
  • 0.5 tsp - Turmeric & Kasuri Methi
  • Whole Spices (Cumin, Bay leaf)

Step-by-Step Instructions

  1. Fry the Petals & Eggs: Thode se tel mein kete hue square pyaz (petals) ko 2 minute saute karein taaki unka crunch bacha rahe. Unhe nikal lein. Usi tel mein uble ande (halki haldi ke sath) fry karke nikal lein.
  2. The Base: Kadhai mein bacha tel garm karein. Jeera aur tej patta dalein. Phir baarik kata hua pyaz dalein aur sunhera (brown) hone tak bhoone.
  3. Spices: Adrak lehsun paste dalein. Phir haldi, laal mirch, dhaniya powder dalein.
  4. Tomato Cook: Tomato puree aur namak dalein. Gravy ko dhak kar tel chhodne tak achhe se bhune.
  5. The Assembly: Jab masala gaadha (thick) ho jaye, tab usme fry kiye hue ande aur sike hue pyaz ke petals dal dein.
  6. Finish: Upar se thodi kasuri methi (masal kar) aur aadha chammach garam masala dalein. Dheemi aanch par 3 min dhak dein taki saare flavor ande aur pyaz mein chale jayein. Serve!
