The Base:

  • 1 packet - Hakka Noodles (approx 200g, Boiled al-dente)
  • 3 nos - Eggs
  • 1 cup - Cabbage & Capsicum (Thinly sliced/Julienned)
  • 1 medium - Onion (Thinly sliced)

The Chinese Tadka:

  • 2 tbsp - Oil
  • 1 tbsp - Garlic (Very finely chopped) & Green Chillies
  • 2 tbsp - Dark Soy Sauce
  • 1 tbsp - Green Chilli Sauce & Vinegar (Sirka)
  • 1 tsp - Black Pepper Powder

Step-by-Step Instructions

  1. Noodle Prep: Noodles ko ubal lein (80% cook karein, thoda kachha rahe). Pani nikal kar thoda thanda pani aur tel dal kar mix karein (taaki chipke nahi).
  2. The Egg: Ek wok ya kadhai garm karein. Thoda tel dalein aur ande tod kar unki bhurji (scramble) bana lein. Isey nikal kar alag rakh dein.
  3. The Wok Hei (High Heat): Kadhai mein baaki tel dalein. Aanch ekdum tez (high) rakhein. Baarik kata lehsun, hari mirch aur pyaz dalein. Sirf 10 second chalayein.
  4. Veggies: Patagobhi aur shimla mirch dalein. 1 minute toss karein (sabzi ka crunch barkarar rehna chahiye).
  5. Sauce Drop: Uble hue noodles kadhai mein dalein. Upar se soy sauce, chilli sauce, sirka, namak aur kali mirch powder dalein.
  6. The Toss: Ande ki bhurji add karein. 2 karchhi (spatulas) lein aur noodles ko lagatar upar-neeche karte hue toss karein taaki sauce sab jagah lag jaye.
  7. Serve: Spring onion (hara pyaz) se garnish karke thela style mein serve karein!
