The Base:

  • 5 nos - Hard Boiled Eggs (Deeply pricked with fork)
  • 1 Lemon size - Tamarind (Imli - Soaked in 1 cup warm water and extract the pulp)
  • 1 tbsp - Jaggery Powder (Gud)

The Pulusu Masala:

  • 2 medium - Onions (Finely chopped)
  • 3 nos - Green Chillies (Slit lengthwise)
  • 2 sprigs - Curry Leaves
  • 1 tbsp - Ginger Garlic Paste
  • 1.5 tsp - Kashmiri Red Chilli Powder & Coriander Powder
  • 0.5 tsp - Mustard seeds, Cumin seeds, Methi (Fenugreek) seeds

Step-by-Step Instructions

  1. Fry Eggs: Kadhai mein 2 chammach tel garm karein. Uble andon ko golden-brown hone tak dhimi aanch par fry karein aur nikal lein.
  2. The Tadka: Usi tel mein rai (mustard seeds), jeera aur methi daana dalein. Kadi patta (curry leaves) aur hari mirch dalkar chatkayein.
  3. The Base: Kate hue pyaz dalein aur sunhera hone tak bhoone. Phir adrak lehsun paste dalein. Laal mirch, dhaniya aur haldi powder dalkar bhune.
  4. The Pulusu (Tang): Imli ka pulp (tamarind water) kadhai mein dalein. Sath mein thoda namak aur 1 cup pani aur dalein.
  5. Balance it: Gravy ko ubalne dein. Jab ubaal aa jaye tab isme gud (jaggery) dalein. (Gud dalne se khataas aur teekhapan perfect balance ho jayega).
  6. Simmer: Fry kiye hue ande gravy mein dalein. Kadhai ko dhak dein aur 15 minute tak dhimi aanch par ubalne dein taaki ande imli ka ras sokh lein aur tel upar tairne lage. Serve with hot rice.
