  • 500 g - Mutton Keema (Finely minced)
  • 0.5 cup - Chana Dal (Soaked for 2 hours)

  • 1 tsp - Cumin seeds (Jeera) & Garam Masala
  • 1 no - Raw Egg (For binding)
  • Oil for shallow frying

Step-by-Step Instructions

  1. Shami Mixture Prep: Ek pressure cooker mein keema, bhigi hui chana dal, adrak-lehsun, sookhi laal mirch, jeera, aur namak dalein. 1/2 cup pani dal kar 4-5 seeti (whistles) aane tak pakayein.
  2. The Mash: Cooker khol kar extra pani completely sukha lein (bhun lein). Mixture ko thanda hone dein aur phir mixer mein bina pani dale ek smooth, chipchipa paste bana lein.
  3. Flavor Up: Keema paste mein garam masala, hara dhaniya, baarik hari mirch aur ek kachha anda (binding ke liye) daal kar achhe se mix karein.
  4. The Nesting (Covering the Egg): Apne hatho par halka sa tel lagayein. Keeme ka ek bada hissa hath par failayein (chapta karein). Uske beech mein ek ubla hua anda rakhein aur keeme ko ande ke charo taraf dhyan se lapet dein. Anda puri tarah seal hona chahiye, koi crack nahi dikhna chahiye.
  5. Frying: Ek pan mein thoda tel garm karein. In 'Nests' ko dhyan se tel mein dalein aur aanch dhimi (medium-low) rakhein. Alatte-palatte hue sabhi taraf se dark golden brown aur crispy hone tak shallow fry karein.
