  • 2 medium - Onions (Roughly chopped and boiled)
  • 15 nos - Cashews (Kaju - Soaked in warm water)
  • 1 tbsp - Melon Seeds (Magajtari - Optional, soaked)

The Royal Spices:

  • 2 tbsp - Oil or Ghee
  • 1 tbsp - Ginger Garlic Paste
  • 2 nos - Green Chillies (Slit - for heat)
  • 0.5 cup - Whisked Yogurt (Dahi)
  • 0.25 cup - Fresh Cream
  • Whole Spices: Cardamom (Elaichi), Cloves (Laung), Cinnamon (Dalchini)
  • 1 tsp - White Pepper Powder (Safed mirch) & Garam Masala

Step-by-Step Instructions

  1. The White Paste: Pyaz ko pani mein 10 min ubal lein (isase uski smell nikal jayegi aur rang safed rahega). Uble pyaz, bheege kaju aur magaj ko mixer mein pees kar ekdam smooth paste bana lein.
  2. Fry the Eggs: Ghee mein andon ko bilkul halka sa sek lein (rang change nahi karna hai). Side nikal lein.
  3. Aromatics: Usi bache ghee mein khade masale (elaichi, laung, dalchini) chatkayein. Phir adrak lehsun paste dalein.
  4. The Shahi Gravy: Kaju-pyaz ka white paste kadhai mein dalein. Aanch dhimi rakhein aur lagataar chalate rahein (kaju jaldi chipakta hai). 5-7 min bhune.
  5. The Yogurt Mix: Fenta hua dahi aur safed mirch powder dalein. Dahi dalte hi lagataar chalayein taaki fate na.
  6. Simmer: Jab gravy thoda tel chhodne lage, namak dalein. Aadha cup pani dalkar gravy ko apne hisaab se adjust karein.
  7. The Finale: Ande gravy mein dalein. Gas band karke fresh cream, thoda sa garam masala aur 2 boond kewra water dalein. Garma-garam serve karein!
