  • Equipment: A deep Tadka Pan (Karandi)

Step-by-Step Instructions

  1. Whisk it Up: Ek cup ya glass mein ande todein, usme pyaz, hari mirch, dhaniya, namak, aur kali mirch dalkar bohot achhe se fente. (Jitna fentenge utna fluffy banega).
  2. Heat the Karandi: Gas par apna tadka pan (ladle) rakhein. Aanch bilkul dhimi (lowest heat) rakhein. Pan mein 1 chamach sesame oil dalein.
  3. The Pour: Garm tel mein ande ka mixture dalein. (Pan ko poora upar tak nahi bharna hai warna phool kar bahar gir jayega).
  4. The Fluff: Dheemi aanch par ande ko set hone dein (1-2 minute). Aap dekhenge ki edges pak gaye hain aur center fool (puff up) raha hai.
  5. The Flip: Ek choti chammach (spoon) lekar, halke haath se omelette ke edges ko pan se alag karein, aur usey spoon ki madad se andar hi andar palat dein (flip). (Yeh ek choti ball ki tarah ghume jaayega).
