The Core:

  • 4 nos - Eggs (Raw)
  • 1 tbsp - Tamarind paste (Imli ka pulp)
  • 0.5 cup - Grated Coconut (Fresh)

The Goan Masala:

  • 4 nos - Dried Red Chillies (Kashmiri or Byadgi)
  • 1 tsp - Coriander seeds, Cumin seeds, Peppercorns
  • 1 medium - Onion (Sliced)
  • 1 tbsp - Coconut Oil

Step-by-Step Instructions

  1. Roast & Paste: Sabut masalo (dhaniya, jeera, sukhi lal mirch, kali mirch) ko tave par halka bhun lein. Nariyal aur thode pani ke sath mixer mein dalkar bilkul fine paste bana lein.
  2. The Broth: Kadhai mein coconut oil garm karein. Pyaz ko brown hone tak bhoone. Phir nariyal ka paste aur haldi dalein.
  3. Simmer: Imli ka pulp, namak aur 2 cup pani dalein (gravy thodi patli / soupy honi chahiye). Isey 10 minute tak ubalne dein taaki kachhe masalo ki smell chali jaye.
  4. The Egg Drop (Crucial): Gravy ubal rahi ho. Gas medium karein. Ek anda tod kar dheere se gravy ke ek kone mein drop karein (hilye nahi). Aise hi baaki 3 ande alag-alag jagah par drop karein.
  5. Poach: Ande dalne ke baad karchhi bilkul mat chalayein. Kadhai ko dhak dein aur 5 min pakne dein. Ande gravy mein hi poach hokar set ho jayenge. Serve hot with rice!
